Today we stopped in Mammoth Cave, Kentucky. We did one of the less strenuous cave tours, and managed to get a few decent photos. It's fairly difficult to get a good photo due to the lack of light, and the necessity of a flash in most areas. See flickr for more photos from the trip. I'd recommend anyone who has the opportunity and likes this sort of thing to go and check out the caves, they are pretty neat. Apparently it's the longest known cave in the world.

Most caves are formed by underground rivers. I think Mammoth caves and long horn caves are two examples of caves that were formed by the ground shifting. At least that is what I think I remember. Long Horn is near Austin: http://www.tpwd.state.tx.us/spdest/findadest/parks/longhorn_cavern/
One of the guys who does tours is trying to start a Photography tour where you can setup tripods. They also have an underground river with eye-less creatures in there too.
I think our tour guide said that at least part of the cave was created by the ground water reacting with the limestone. Although that may just be how the interesting rock formations were created, inside the caves.
